Coconut cream pie…..CAKE!

If you like cake or maybe coconut or cream cheese try this cake!!!! It was honestly amazing! I made this cake when my friend was over this past weekend and it was awesome! Now if you do make this cake  make sure you serve it after it spends the night in the fridge, its amazing cold :).  I found this recipe in Bon Appetit magazine, this cake is from a resteraunt called “Hominy Grill” and they call it “Classic coconut cake” but I thought coconut cream pie cake was a more appropriate name since it describes the cake perfectly. Now this is a dense dense cake, all you need is one slice..you do not go back for seconds with this one..the cake is like a meal! It took me a while to realize this cake was like coconut creme pie though..but if after reading this you try the recipe and finish the cake and let it cool over night…and then the next day you take a bit you’ll realize what i mean right away.

k so for this recipe you will need:

for the cake:

  • nonstick vegetable spray
  • 2 cups all-purpose flour
  • 1 1/2  cups sweetened flaked coconut
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 2 cups sugar
  • 1 cup butter
  • 5 egg yolks
  • 4 eggs whites

for the frosting

  • 31/2 cups powdered sugar
  • 1  8 ounce package of cream cheese
  • 1/2 cup butter
  • 2 teaspoons vanilla extract
  • extra coconut to cover the beautiful cake

Cake:

K, so to start preheat the oven to 350 and coat two 9 inch cake pans with nonstick spray..set aside. Mix the flour and coconut in a medium bowl set aside. Whisk buttermilk and baking soda in a small bowl(..k little insider help..don’t use a coffee cup or something that can barely hold a cup..the buttermilk mixture expands so use a big enough bowl so you don’t have to dirty up 3 dishes for this one step haha) set aside.

Beat sugar, and butter in a large bowl until light and fluffy…2 minutes..add the egg yolks and beat to blend. Add the flour mixture in 3 additions alternately with buttermilk mixture in 2 additions..beating just to blend.

  Using clean dry beaters, beat egg whites and 1/4 teaspoon salt in another large bowl until peaks form. Add 1/3 of egg white mixture to batter and fold in just to blend. Fold in remaining egg white mixture in two additions.

Divide the batter between the two cake pans and bake the cakes for about 35  minutes. When the cakes are done remove them from the pans and let them cool on racks.

Frosting:

Use an electric mixer and beat sugar, cream cheese, butter and vanilla in a large bowl until blended. When the cake has cooled start frosting and when the cake is completely covered with this deliciousness start topping with more coconut…I sprinkled coconut all over, even on the sides and it came out perfect 🙂 .

Peanut butter cake

A few days ago my brother asked me if I could make brownies but with peanut butter instead of chocolate, and it immediately reminded me of peanut butter cake..which I had made a few years prior just to try out. This cake is amazing to say the least, the actual cake is light and fluffy and then there is a topping and..well..lets just say its like eating a cake that’s topped with cookie. It’s a great easy recipe that everyone loves..even those who don’t eat peanut butter love this!

For this recipe you will need the following:

the topping :

1/2 cup flour

1/2 cup brown sugar (packed)

1/4 cup peanut butter

3 tablespoons butter

the lovely cake:

2 cups flour

1 cup brown sugar (packed)

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup milk

1/2 cup peanut butter

3 tablespoons honey

2 eggs

1/4 cup butter (softened)

K, now for the topping get a small bowl and stir together the flour  and the brown sugar. Then using a pastry cutter (or a fork, anything similar) cut in the peanut butter and the butter till mixture becomes coarse crumbs. Set aside 🙂

In a large mixing bowl stir together the flour and brown sugar, baking powder, baking soda and salt. Add the milk, peanut butter, honey, eggs, and butter. Beat with an electric mixer on lowest speed till combined, then beat on high-speed for 3 minutes (when done it should look like a tan cream soup..mm haha.

Now pour batter in to either a greased 13x9x2 inch pan or two greased 9x8x2 ( i used the two 9x8x2 pans) and spread the batter evenly. Sprinkle the topping on and bake at 375 for about 30 minutes.

Some tips:

If the top starts browning or burning before the cake is done, cover lightly with aluminum foil and lower the temperature around 5 to 10 degrees. This cake is amazing, but don’t cook it too long because then it isn’t, I have found that if you test the cake with a toothpick in the middle and it comes out with a few crumbs its done…dont wait till its clean because then its dry.

This cake is amazing fresh from the oven, take a chance and make this cake even if you don’t love peanut butter because this cake may just convert you :).

 

 Oh and sorry no pictures…my camera was dead and I couldn’t find any batteries but they both came out beautifully!

Pictures from my weekend

I was just about to get off my computer when I realized I hadn’t posted the pictures from when I went to the movies to see Voyage of the Dawn Treader and the rest of my weekend…so i quickly jumped back on (:

K so this weekend I went and saw Voyage of the Dawn Treader and I took pics of the movie poster and of things at the theater and then saturday I went to my best friends little brothers bday party because he’s beyond awesome!

Every loyal fan has something they can wear to a new movie and im a loyal fan…in comes my lion medallion! I bought this thing off of eBay about two years ago and I LOVE it…the lion looks like Aslan so that’s a win. The second picture is of the movie poster..the awesomely magical movie poster that made me even more excited (if that was even possible). The third picture is awesome..it has nothing to do with Narnia but everything to do with the movie theater and Some Like it Hot…enter the Some like it grilled sign at the concession stand in the movies that blew my mind! Its even written in the same font used for Some like it Hot. The last picture is very random but funny..as me and my friend are sitting there waiting for the movie to start the sign that tells you to shhhhh got stuck for like 3 minutes..so I took a picture..that night i also lost my wallet at the movies and i literally almost passed out but then the awesome movie workers found it! yay! k now its time to party….

My best friends little brother turned 7 on saturday!!! so yeah we went out and partied at Dave and Busters which was a lot of fun! I spent most of my time on this pirate game where you shot skeleton pirates with a machine gun…so much fun (the game is at Disneyland’s arcade too that’s where I first found it) I also got to watch three drunk lady’s fight at the bar (it wasnt a big deal they were just kinda yelling at eachother…I just could not believe how drunk they were) After cashing in our tickets my friend and I shopped and I got awesome stuff (well I think its awesome). We then headed back to my friend’s house and turned a cake in to a donut (yeah I know awesome right?) and watched her little bro rip threw his present’s (: it was a fun night.

K now my goal for the week is to of course post the song of the week (which will get done ) but I also want to post a recipe for peanut butter cookies that I have been waiting to post for about a month now so if im lucky that will happen this week..but if not I have no school for two weeks after this week so it will happen then (: have a great week!!!!
